Apricot and White Chocolate Cookies

Ingredients;

150g (1/2 cup) Softened Salted butter

80g (1/4 cup) light brown sugar

80g (1/4 cup) Caster Sugar

2 tsp vanilla extract

1 egg

255g (1 ½ cup) plain flour

½ tsp bicarb of soda

¼ tsp salt

200g (1 cup) white chocolate chips

50g (1/4 cup) dried apricots

Method;

§ Heat the oven to 190C/370F and line two baking trays with baking paper.

§ Put butter, brown sugar and caster sugar and beat until creamy.

§ Beat in 2 tsp vanilla extract and 1 large egg.

§ Sift in the plain flour, bicarb soda and salt into the bowl and mix it in with a wooden spoon.

§ Finely chop the apricots. Add the chocolate chips and apricot to the mixture

§ Use a teaspoon to make small scoops of the mixture, spacing them well apart on the baking trays. This mixture should make about 30 cookies.

§ Bake for 8–10 mins until they are light brown on the edges,

§ Leave on the tray for a couple of mins to set and then allow to cool on a wire wrack.
