A healthy choice for when those sugar cravings kick in!
300g (3 cups) self raising flour
1 tsp bicarb of sofa
100g (2/3 cup) brown sugar
50g (3/4 cup) porridge oats, plus 1 tbsp for topping
2 ripe bananas
1 tbsp vinegar
5 tbsp olive oil
2 egg whites
150g (1 cup) blueberries
§ Pre heat the oven to 160C/320F and line a 12-hole muffin tin.
§ Tip the flour and soda into a bowl and mix in the sugar, holding back 50g (1/3 cup)
§ Mix 50g (1/3 cup) of the oats into the flour bowl, and make a well in the centre
§ In a separate bowl, mash the bananas until nearly smooth.
§ Mix the milk, vinegar, oil and egg whites into the mashed banana until evenly combined.
§ Pour the liquid mixture into the well and stir quickly and briefly (all the flour does not need to be incorporated)
§ Add the blueberries and give it one more stir.
§ Divide the mix between the muffin cases — they will be quite full
§ Then sprinkle the tops with the remaining oats and the rest of the sugar.
§ Bake for 18–20 mins until risen and dark golden.
§ Leave to cool and enjoy
