Strawberry Meringues

These delectable melt in the mouth meringues are perfect for dessert and entertaining
Meringues
4 large egg whites
115g (3/4 cups) caster sugar
11g (3/4 cups) icing sugar sifted
1tsp of lemon
Preheat the oven to 110c/230f
Whisk the egg whites with the lemon on a medium speed and slowly add in the caster sugar, 1 tbsp at a time until the mixture is thick, glossy and has formed stiff peaks
Gently fold in the icing sugar, 1/3 at a time.
Pipe or spoon onto lined baking trays and bake for 1.5 hours
Remove the meringues from the tray to cool immediately
Strawberry Buttercream
224g ( 1cup) unsalted butter
460g (4cups) icing sugar sifted
2tbsp strawberry jam
3–4 tbsp whole milk
Beat the butter until a pale colour
Slowly add in the icing sugar until fully incorporated
Add in the jam and mix for a further 5mins
Add milk in until a spreadable consistency is achieved
Pipe onto half the meringues and sandwhich together
Make a cup of tea and enjoy!
