Stuffed full of mozzarella and garlic butter, this is a real show stopper but so easy to make.

Ingredients;

450g (2 3/4 cups) strong white bread flour

7g (2 tsp) yeast

2 tsp caster sugar

10g salt

300ml warm water

2 tbsp dried oregano

250g (1 1/2 cups) grated mozzarella

50g salted butter

large garlic clove

§ Combine the flour, sugar, yeast and salt in a large bowl before making a well in the centre

§ Mix the oil in the warm water and pour into the well

§ Form into a dough, adding a splash more water if the dough is a little dry

§ Knead on a floured surface for 8–10mins

§ Place dough into a clean bowl, cover with cling film and leave in a warm area to prove for an hour.

§ Punch the dough down and roll out to rectangle (approx. 15 x 25 cm)

§ Finely grate the garlic and combine with the butter

§ Spread thinly and evenly over the dough before scattering the mozzarella

§ Roll the dough tightly length ways

§ Leaving about an inch at the top, slice the dough roll in half lengthways

§ Braid the bread by placing left over right and then right over left

§ Coil the bread into a snail shape

§ Place in a baking tray, cover and leave to proof for another 30 mins

§ Pre heat the oven to 200C/390F. Brush the dough with an egg wash (optional)

§ Bake for 25mins

§ Allow to cool and enjoy!
